Ingredients

1 lb ground beef

2 medium potatoes, diced

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 small red onion, diced

1 cup mushrooms, sliced

3 cloves garlic, minced

1 tsp dried oregano

1/2 tsp ground cumin

1/2 tsp smoked paprika

1/4 tsp crushed red pepper flakes (optional)

Salt and black pepper to taste

2 tbsp olive oil

1 tbsp fresh parsley, chopped

Juice of 1/2 lemon


Instructions

1. Dice potatoes and parboil them in salted water for 5–7 minutes, then drain and pat dry.

2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add potatoes and sauté for 6–8 minutes until golden and crispy. Set aside.

3. In the same pan, add 1 tbsp olive oil and the ground beef. Cook for 5–7 minutes, breaking it apart and letting it brown.

4. Season beef with salt, pepper, cumin, and smoked paprika while it cooks.

5. Add garlic, onion, bell peppers, and mushrooms. Cook for another 5–6 minutes until vegetables are tender.

6. Return potatoes to the skillet. Sprinkle with oregano and red pepper flakes. Toss everything together and cook for 2–3 more minutes.

7. Turn off heat. Squeeze lemon juice and add chopped parsley. Toss and serve hot.

8. Optional: Top with feta cheese or olives for added flavor.


Notes

For crispier potatoes, be sure to pat them dry thoroughly after boiling.

Fresh parsley or basil should always be added at the end for best flavor.

You can easily swap the ground beef for ground turkey or a plant-based alternative.
