Ingredients
3 pounds Russet or Yukon Gold potatoes
1/2 cup unsalted butter
3/4 cup sour cream
1/2 cup whole milk
4 ounces cream cheese (optional)
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder or 2 cloves garlic, minced
1 cup shredded cheddar or Gruyère cheese (optional topping)
2 tablespoons chopped chives or green onions (garnish)
Instructions
1. Peel potatoes and cut into chunks. Place in a large pot with cold, salted water. Bring to a boil and cook until fork-tender, about 15–20 minutes.
2. Drain potatoes and return to pot or mixing bowl. Mash until smooth.
3. Add butter, sour cream, milk, cream cheese (if using), garlic, salt, and pepper. Mix until fully incorporated and creamy.
4. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
5. Spread mashed potatoes evenly in the dish. Top with shredded cheese if desired.
6. Bake uncovered for 25–30 minutes or until top is lightly golden and bubbling.
7. Let rest 5–10 minutes. Garnish with chives or green onions and serve.
Notes
For best texture, use starchy potatoes like Russets or a mix with Yukon Golds.
Don’t overmix the mashed potatoes—stop when they’re just smooth.
You can prep this a day ahead and refrigerate; just add 10–15 minutes to bake time if cold.
