Ingredients

3 pounds sweet potatoes (peeled and cubed)

1/2 cup brown sugar

1/4 cup unsalted butter (melted)

1/4 cup maple syrup (optional)

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

1 teaspoon vanilla extract

23 cups mini marshmallows

1/4 cup chopped pecans (optional)


Instructions

1. Peel and cube sweet potatoes into even 1-inch pieces. Rinse under cold water.

2. In a bowl, mix melted butter, brown sugar, maple syrup (if using), cinnamon, nutmeg, salt, and vanilla extract.

3. Place sweet potatoes into crock pot and pour glaze over them. Stir to coat evenly. Add pecans if desired.

4. Cover and cook on LOW for 5–6 hours or HIGH for 2.5–3 hours, until fork tender. Stir occasionally.

5. About 10–15 minutes before serving, sprinkle marshmallows on top and cover until just melted.

6. Optional: For a toasted finish, transfer to a baking dish and broil for 1–2 minutes.

7. Serve hot directly from crock pot or dish and enjoy!


Notes

Don’t add the marshmallows too early—they’ll melt completely and disappear.

For extra texture, stir in chopped pecans or walnuts near the end.
