Ingredients

Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter

Sauce:

  • 3 cloves garlic, minced
  • 1/2 cup chicken broth (or dry white wine)
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 tsp red pepper flakes (optional)
  • 1 tsp Italian seasoning
  • 1 tbsp fresh thyme (or 1/2 tsp dried)
  • Fresh basil or parsley for garnish

Optional:

  • 4 strips of cooked bacon, chopped
  • 1/2 small shallot, minced

Instructions

  1. Pat chicken dry and season both sides with salt, pepper, and Italian seasoning.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Sear chicken for 4–5 minutes per side until golden. Remove and set aside.
  3. Lower heat and add garlic (and shallots, if using). Sauté for 1 minute.
  4. Deglaze pan with chicken broth or wine, scraping browned bits.
  5. Stir in cream, parmesan, sun-dried tomatoes, red pepper flakes, Italian seasoning, and thyme. Simmer for 3–5 minutes.
  6. Return chicken to skillet. Spoon sauce over the top. Add bacon if using. Simmer for 8–10 minutes until chicken reaches 165°F.
  7. Garnish with fresh basil or parsley and serve hot.
