Ingredients
Chicken:
- 4 boneless, skinless chicken breasts
- Salt and freshly ground black pepper
- 1 tbsp olive oil
- 1 tbsp unsalted butter
Sauce:
- 3 cloves garlic, minced
- 1/2 cup chicken broth (or dry white wine)
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 tsp red pepper flakes (optional)
- 1 tsp Italian seasoning
- 1 tbsp fresh thyme (or 1/2 tsp dried)
- Fresh basil or parsley for garnish
Optional:
- 4 strips of cooked bacon, chopped
- 1/2 small shallot, minced
Instructions
- Pat chicken dry and season both sides with salt, pepper, and Italian seasoning.
- In a large skillet, heat olive oil and butter over medium-high heat. Sear chicken for 4–5 minutes per side until golden. Remove and set aside.
- Lower heat and add garlic (and shallots, if using). Sauté for 1 minute.
- Deglaze pan with chicken broth or wine, scraping browned bits.
- Stir in cream, parmesan, sun-dried tomatoes, red pepper flakes, Italian seasoning, and thyme. Simmer for 3–5 minutes.
- Return chicken to skillet. Spoon sauce over the top. Add bacon if using. Simmer for 8–10 minutes until chicken reaches 165°F.
- Garnish with fresh basil or parsley and serve hot.
