Ingredients

2 chicken breasts

2 tablespoons olive oil

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

3/4 cup parmesan cheese, freshly grated

1/2 cup sun-dried tomatoes, chopped

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

12 ounces penne pasta

2 tablespoons fresh basil or parsley, chopped


Instructions

1. Season chicken with salt, pepper, and Italian seasoning.

2. Heat olive oil in a skillet and sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.

3. Cook pasta in salted boiling water until al dente. Drain and reserve 1 cup pasta water.

4. In the same skillet, sauté garlic for 30 seconds. Add chicken broth and scrape up browned bits.

5. Pour in heavy cream and bring to a simmer. Stir in parmesan, sun-dried tomatoes, Italian seasoning, and red pepper flakes.

6. Let the sauce simmer until slightly thickened.

7. Slice chicken and return to skillet. Add cooked pasta and toss everything together.

8. Add a splash of reserved pasta water if sauce is too thick.

9. Garnish with fresh basil or parsley and serve hot.

10. Top with extra parmesan if desired.
