1 ¾ cups all-purpose flour

½ teaspoon baking soda

¼ teaspoon salt

¾ cup unsalted butter, softened

½ cup brown sugar

¼ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

¾ cup maraschino cherries, chopped and patted dry

1 cup semi-sweet chocolate chips


Instructions

1. Drain and chop the maraschino cherries, then pat dry thoroughly with paper towels.

2. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.

3. In a medium bowl, whisk together the flour, baking soda, and salt.

4. In a large bowl, beat the butter with both sugars until light and fluffy, about 2–3 minutes.

5. Add in the egg and vanilla extract, mixing until smooth.

6. Gradually stir in the dry ingredients until just combined.

7. Fold in the chopped cherries and chocolate chips evenly.

8. Scoop tablespoon-sized dough balls onto the prepared baking sheets, spacing them 2 inches apart.

9. Bake for 10–12 minutes, or until edges are golden and centers are still soft.

10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.


Notes

Always pat the cherries dry after chopping to avoid adding excess moisture to the dough.
