1 teaspoon sea salt

Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or silicone mat.

2. Peel and slice sweet potatoes into 1/2-inch thick rounds.

3. In a small saucepan, gently warm maple syrup, olive oil, cinnamon, nutmeg, cayenne, salt, and pepper until blended.

4. Pour glaze over sweet potatoes in a large bowl and toss to coat evenly.

5. Arrange slices on baking sheet in a single layer without overlapping.

6. Roast for 25–30 minutes, flipping halfway, until golden and fork-tender.

7. Remove from oven and immediately sprinkle with toasted walnuts and fresh thyme.

8. Transfer to a platter, drizzle leftover glaze, and garnish with more thyme before serving.


Notes
