Ingredients

3 tablespoons unsalted butter

2 tablespoons olive oil

2 large yellow onions, thinly sliced

2 pounds Yukon Gold potatoes, sliced into 1/4-inch rounds

1/4 cup fresh parsley, chopped

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Peel (optional) and slice potatoes into 1/4-inch rounds. Rinse in cold water, then pat dry thoroughly.

2. Heat 1 tablespoon butter and 1 tablespoon olive oil in a large skillet over medium heat.

3. Add onions and cook for 15–20 minutes, stirring occasionally, until caramelized. Remove and set aside.

4. Add 1 tablespoon butter and 1 tablespoon oil to the same pan. Add a layer of potato slices and cook 4–5 minutes per side until golden and crisp. Work in batches.

5. Return all potatoes and onions to the pan, toss gently to combine, and cook for 2–3 more minutes.

6. Season with salt and pepper.

7. Garnish with chopped parsley and serve warm.


Notes

Make sure to thoroughly dry the potato slices before cooking to help them crisp up properly.
