Low Carb Bacon Cheeseburger Casserole is a cheesy, savory, and satisfying twist on the classic burger—minus the bun. It combines seasoned ground beef, creamy eggs, melty cheddar, and crispy bacon for a rich and comforting low-carb meal. Perfect for keto diets, easy weeknight dinners, or make-ahead lunches.


Ingredients

  • 1 1/2 pounds ground beef
  • 1 small onion, finely diced (optional)
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 4 oz cream cheese, softened
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese (divided)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.
  2. In a large skillet, brown the ground beef. Add onion and garlic halfway through; cook until softened. Drain the grease.
  3. Stir in the salt, pepper, smoked paprika, and softened cream cheese. Mix until combined, then remove from heat.
  4. In a bowl, whisk together eggs and heavy cream until smooth.
  5. Spread the beef mixture evenly into the casserole dish.
  6. Pour the egg mixture over the beef.
  7. Sprinkle 1 cup of shredded cheddar cheese on top.
  8. Bake uncovered for 20–25 minutes, until the egg layer is set.
  9. Remove from oven, sprinkle with remaining 1/2 cup of cheddar and chopped bacon.
  10. Bake for an additional 5–7 minutes, until cheese is melted and bubbly.
  11. Let rest for 5–10 minutes before serving.
