Ingredients
1 cup long-grain white rice (Basmati or Jasmine)
2 tablespoons olive oil or butter
2 cloves garlic, minced
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
2 cups vegetable or chicken broth
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh parsley or herb mix, chopped
Instructions
1. Rinse the rice under cold running water for 1–2 minutes to remove excess starch.
2. Heat olive oil or butter in a saucepan over medium heat. Add rice and toast for 2–3 minutes.
3. Add minced garlic and sauté for 30 seconds until fragrant.
4. Pour in broth, lemon zest, salt, and pepper. Stir and bring to a gentle boil.
5. Reduce heat to low, cover, and simmer for 15–18 minutes until rice is cooked and liquid absorbed.
6. Remove from heat and let sit covered for 5–10 minutes to steam.
