2 roasted red bell peppers
2 tbsp unsalted butter

1 cup heavy cream

½ tsp smoked paprika

8 oz rotini pasta
Salted water, for boiling

Instructions
1. Bring a large pot of salted water to a boil. Add rotini pasta and cook until al dente. Reserve ¼ cup pasta water, then drain and set aside.
2. Toss the diced chicken with lemon pepper seasoning, garlic powder, paprika, and salt.
3. Heat olive oil and butter in a cast iron skillet over medium-high heat. Add chicken in a single layer. Cook 3–4 minutes per side until golden and cooked through. Remove and set aside.
4. Blend roasted red peppers in a food processor until smooth.
5. In a saucepan, melt butter and sauté garlic for 1 minute. Stir in the blended red pepper, Cajun seasoning, paprika, salt, and pepper.
