Ingredients
1 lb large shrimp, peeled and deveined
1 cup orzo pasta
2 tablespoons olive oil
3 tablespoons unsalted butter, divided
4 cloves garlic, minced
1 small shallot, finely chopped
Zest of 1 lemon
Juice of 1 large lemon
2 1/4 cups low-sodium chicken broth
1/4 teaspoon red pepper flakes
Salt and black pepper, to taste
Fresh parsley, chopped
Lemon wedges, for serving
Instructions
1. Pat the shrimp dry and season with salt, pepper, and red pepper flakes.
2. In a large skillet, heat 1 tablespoon olive oil and 1 tablespoon butter. Sear shrimp for 1–2 minutes per side. Remove and set aside.
3. Add remaining olive oil to the pan. Sauté shallot for 2 minutes, then add garlic and lemon zest for 30 seconds.
4. Stir in the orzo and toast for 1–2 minutes.
5. Add lemon juice and deglaze the pan. Pour in broth, bring to a boil, then simmer for 8–10 minutes while stirring.
6. Stir in remaining butter, return shrimp, and cook 2–3 more minutes. Season to taste.
7. Garnish with parsley and serve with lemon wedges.
