Ingredients

  • 1.5 lbs chicken tenderloins (or boneless, skinless chicken breasts cut into strips)
  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs or panko
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 2 eggs
  • 1/2 cup all-purpose flour
  • Salt and pepper to taste
  • 2 tbsp chopped parsley (optional)
  • Oil for frying (olive oil or neutral oil)

Instructions

  1. Set up a breading station with three shallow bowls: flour with salt and pepper in the first, beaten eggs in the second, and a mix of breadcrumbs, Parmesan, lemon zest, minced garlic, and parsley in the third.
