Ingredients

1/2 cup chia seeds

2 cups plant-based milk (such as almond or oat)

2 tablespoons maple syrup

1 teaspoon vanilla extract

1/2 cup coconut cream

1/4 cup fresh lemon juice

1 tablespoon lemon zest

1 tablespoon maple syrup (for lemon cream)

1 tablespoon cornstarch or arrowroot powder

1 pinch turmeric (optional)


Instructions

1. In a bowl or jar, mix chia seeds, plant-based milk, maple syrup, and vanilla extract.

2. Whisk thoroughly to avoid clumping.

3. Let the mixture sit for 5 minutes, then stir again. Cover and refrigerate for at least 2 hours or overnight.

4. To make the lemon cream, combine coconut cream, lemon juice, lemon zest, maple syrup, and cornstarch in a saucepan.

5. Whisk continuously over medium heat until it thickens, about 5–7 minutes. Remove from heat.

6. Add a pinch of turmeric if using and let the lemon cream cool to room temperature.

7. Once both layers are ready, spoon chia pudding into jars or cups, then layer lemon cream on top.

8. Refrigerate the assembled pudding for 30 minutes to allow the layers to set.

9. Top with fruit, lemon zest, or coconut flakes before serving.

10. Store in the fridge for up to 5 days.


Notes

Stir the chia pudding after the first 5 minutes to prevent clumps and ensure even consistency.

Use full-fat coconut cream for a rich and creamy lemon layer that holds its shape.
