Ingredients
- 4 boneless, skinless chicken thighs or breasts
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons butter (plus 1 tablespoon for the sauce)
- 3 garlic cloves, minced
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice (from 1–2 lemons)
- Zest of 1 lemon
- Salt and pepper, to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Pat chicken dry and season with salt and pepper. Dredge in flour, shaking off excess.
- Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden and cooked through. Set aside.
- Lower heat, add remaining butter and garlic. Sauté for 30 seconds.
- Pour in chicken broth, scraping up browned bits. Stir in lemon juice and zest. Simmer 2–3 minutes.
- Return chicken to the pan and cook 2–3 more minutes, spooning sauce over the top.
- Garnish with fresh parsley and serve.
