Description

Ingredients

1 lb chicken breast, cut into bite-sized pieces

1 ½ tbsp Cajun seasoning

2 tbsp lemon juice, freshly squeezed

2 tbsp olive oil

2 tbsp butter

3 cloves garlic, minced

1 cup heavy cream

¾ cup freshly grated Parmesan cheese

10 oz rotini pasta

2 tbsp chopped fresh parsley

½ tsp salt

¼ tsp black pepper


Instructions

1. Cut the chicken into bite-sized chunks and toss with Cajun seasoning, salt, black pepper, and lemon juice. Let marinate for 10–15 minutes.

2. Heat olive oil in a skillet over medium-high heat. Sear the chicken in a single layer for 3–4 minutes per side until golden and cooked through. Set aside.

3. In a large pot, cook rotini pasta in salted water according to package directions until al dente. Drain, reserving ½ cup of pasta water.

4. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

5. Stir in heavy cream and let it simmer gently for 3–4 minutes to thicken slightly.

6. Add cooked pasta to the skillet. Stir in Parmesan cheese and splash of pasta water to create a creamy sauce.

7. Return chicken to the pan and toss everything together.

8. Garnish with fresh parsley and more Parmesan if desired. Serve hot.


Notes

Use freshly grated Parmesan for the smoothest, best-melting sauce.

Don’t skip the pasta water—just a splash helps make the sauce cling perfectly.

If you’re heat-sensitive, start with half the Cajun seasoning and add more to taste.
