Ingredients
- 2 cups cold leftover mashed potatoes
- 1 large egg, beaten
- 1 cup shredded sharp cheddar cheese
- 2 tbsp grated Parmesan cheese
- 2 tbsp chopped fresh chives or green onions
- 1/4 tsp garlic powder (optional)
- Salt and black pepper to taste
- Non-stick cooking spray or butter (for greasing)
Instructions
- Preheat your oven to 400°F (200°C).
- Generously grease a mini muffin pan with cooking spray or butter.
- In a large bowl, combine mashed potatoes, beaten egg, cheddar cheese, Parmesan, chives, garlic powder (if using), salt, and pepper.
- Mix until just combined without overworking.
- Spoon the mixture into the muffin cups, filling each about 3/4 full.
- Bake for 20–25 minutes until golden brown and crispy on top.
