Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (16 oz) can refried beans
  • 6 medium flour tortillas
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup chopped fresh tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • Non-stick spray or a bit of oil (for greasing dish)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.
  2. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  3. Add taco seasoning and water to the skillet, stir to combine, and simmer for 2–3 minutes.
  4. Stir in diced tomatoes with green chilies and refried beans. Mix until well combined and heated through.
  5. Layer two tortillas at the bottom of the prepared baking dish.
  6. Spread 1/3 of the meat and bean mixture over the tortillas, then sprinkle with 1/3 of the cheese.
  7. Repeat layers two more times: tortillas, meat mixture, cheese.
  8. Cover with foil and bake for 20 minutes.
  9. Remove foil and bake for another 10 minutes until cheese is bubbly and golden.
  10. Let it rest for 5–10 minutes before slicing.
  11. Top with sour cream, chopped tomatoes, green onions, and cilantro before serving.
