Ingredients

450g boneless skinless chicken thighs

300g broccoli florets

120g cream cheese

120ml heavy cream

100g shredded cheddar cheese

100g shredded mozzarella cheese

1 tsp garlic powder

1 tsp onion powder

Salt to taste

Black pepper to taste

1/4 tsp red pepper flakes (optional)

1 tbsp fresh thyme or parsley for garnish (optional)

Instructions

1. Cut chicken thighs into large bite-sized chunks and season with salt, pepper, garlic powder, and onion powder.

2. Place chicken pieces at the bottom of your crockpot.

3. Top with dollops of cream cheese and pour in the heavy cream.

4. Add the broccoli florets on top.

5. Cover and cook on low for 4–5 hours or high for 2–3 hours.

6. Once cooked, stir gently to mix the cream cheese evenly into the sauce.

7. Sprinkle shredded cheddar and mozzarella over the top.

8. Cover again and cook on high for 15–20 minutes until cheese is melted and bubbly.

9. Garnish with red pepper flakes and herbs before serving.

10. Serve hot and enjoy!

Notes

Use room temperature cream cheese to ensure smooth melting and avoid clumping.

Thaw and drain broccoli if using frozen to prevent excess moisture.

Stir gently after cooking to maintain the chicken’s structure and achieve a creamy sauce.
