Ingredients

For the Salad:

  • 1 large bunch of kale, washed and chopped
  • ½ cup Parmesan cheese, freshly grated
  • 2 cups croutons (store-bought or homemade)

For the Caesar Dressing:

  • ½ cup mayonnaise (or Greek yogurt for a lighter version)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 teaspoon Dijon mustard
  • 2 garlic cloves, minced
  • 1 teaspoon Worcestershire sauce
  • 2 anchovy fillets, finely minced (or 1 teaspoon anchovy paste) – optional
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup Parmesan cheese, finely grated
  • 12 tablespoons water, to adjust consistency

For Homemade Croutons (Optional):

  • 2 cups day-old bread, cut into cubes
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Prepare the Kale
    • Remove the thick stems and chop the kale into bite-sized pieces.
    • Rinse thoroughly and dry using a salad spinner or clean towel.
    • Massage the kale with a drizzle of olive oil or lemon juice for 1–2 minutes to soften.
  2. Make the Caesar Dressing
    • In a bowl, whisk together mayonnaise, olive oil, lemon juice, Dijon mustard, garlic, Worcestershire sauce, anchovies (if using), salt, and pepper.
    • Stir in the grated Parmesan cheese.
    • Add water, a tablespoon at a time, until the dressing reaches the desired consistency. Set aside.
  3. Prepare the Croutons (If Making Homemade)
    • Preheat the oven to 375°F (190°C).
    • Toss the bread cubes with olive oil, garlic powder, salt, and pepper.
    • Spread them on a baking sheet and bake for 10–12 minutes, or until golden and crispy.
  4. Assemble the Salad
    • In a large mixing bowl, add the chopped kale.
    • Pour the Caesar dressing over and toss well to coat the leaves.
    • Add croutons and grated Parmesan, tossing gently to combine.
  5. Serve and Enjoy
    • Transfer to a serving dish.
    • Garnish with extra Parmesan and freshly cracked black pepper.
