Ingredients

1 lb ground turkey (93% lean)

1/2 medium onion, grated

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon paprika

1/8 teaspoon cinnamon (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup breadcrumbs

1 tablespoon olive oil

8 wooden skewers, soaked in water


Instructions

1. Soak the wooden skewers in water for at least 30 minutes. Prep the parsley, onion, and garlic.

2. In a large bowl, combine ground turkey, onion, garlic, parsley, cumin, coriander, paprika, cinnamon, breadcrumbs, olive oil, salt, and pepper. Mix gently until just combined.

3. Divide the mixture into 8 equal portions. Mold each portion around a skewer to form a 1-inch-thick log shape.

4. Preheat the grill to medium-high heat. Oil the grill grates to prevent sticking.

5. Grill the skewers for 10–12 minutes, turning frequently until fully cooked and browned. Internal temperature should reach 165°F.

6. Remove from grill and let rest for 5 minutes before serving with your favorite sides.


Notes

Use 93% lean ground turkey for optimal moisture and flavor balance.

If possible, chill the shaped koftas before grilling to help them hold their shape better.

Make sure to oil the grill grates well to prevent the koftas from sticking or tearing.
