Ingredients

2 boneless, skinless chicken breasts

2 medium zucchinis, sliced

3 garlic cloves, minced

3 tablespoons butter

1 tablespoon olive oil

2 tablespoons lemon juice

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley


Instructions

1. Slice chicken breasts horizontally into thin cutlets. Pat dry and season with salt, pepper, and Italian seasoning.

2. Heat olive oil and 1.5 tablespoons of butter in a large skillet over medium-high heat.

3. Sear the chicken cutlets for 4–5 minutes per side until golden brown and cooked through. Remove and set aside.

4. In the same skillet, add sliced zucchini with 1 tablespoon of butter. Sauté for 3–4 minutes until lightly browned.

5. Add minced garlic and cook for 30 seconds until fragrant.

6. Pour in lemon juice and remaining 0.5 tablespoon butter, scraping up any browned bits to make a sauce.

7. Return chicken to skillet, nestle it into the zucchini, and spoon sauce over the top. Let everything warm together for 2 minutes.

8. Sprinkle with chopped parsley and serve hot.
