Ingredients
2 pounds Yukon Gold potatoes
2 cups fresh green beans, trimmed
1 cup fresh cranberries
1 cup shredded cheddar cheese
4 tablespoons unsalted butter
1/2 cup whole milk or cream
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 teaspoon olive oil (for roasting cranberries)
Instructions
1. Peel and chop the potatoes into chunks. Boil in salted water for 15–20 minutes until tender.
2. Drain the potatoes. Mash with butter, warm milk or cream, salt, pepper, and garlic powder until smooth.
3. Blanch green beans in boiling water for 3–4 minutes, then place in an ice bath to stop cooking.
4. Toss cranberries with olive oil and roast at 400°F for 10–12 minutes until slightly burst.
5. In a buttered baking dish, spread the mashed potatoes. Top with green beans and roasted cranberries.
6. Sprinkle cheddar cheese evenly over the top.
7. Bake at 375°F for 20–25 minutes until cheese is golden and bubbly.
8. Let rest for 5 minutes before serving.
Notes
Warming the milk before mashing helps make the potatoes ultra smooth.
Use freshly shredded cheese for the best melt and flavor.
Don’t skip the ice bath for green beans—it keeps them vibrant and crisp.
