Ingredients
- 1 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
- 2 cups semi-sweet or dark chocolate, chopped or chips
- Optional: chopped peanuts or sea salt flakes for topping
Instructions
- In a large bowl, mix together peanut butter and softened butter until smooth.
- Add powdered sugar, vanilla extract, and salt. Mix until a thick dough forms.
- Roll the dough into 1-tablespoon-sized balls and place on a parchment-lined tray.
- Chill the truffles in the refrigerator for 20–30 minutes.
- Melt the chocolate in the microwave in 30-second intervals, stirring each time until smooth.
- Dip each chilled ball into the melted chocolate, letting the excess drip off.
- Return dipped truffles to the tray and sprinkle with chopped peanuts or sea salt if desired.
- Chill again for 15–20 minutes until the chocolate sets.
