Ingredients
3 cups shredded potatoes
2 cups shredded green cabbage
1 ½ cups Irish cheddar cheese, freshly grated
3 green onions, finely sliced
2 tablespoons unsalted butter
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon smoked paprika (optional)
1 tablespoon olive oil (optional)
Instructions
1. Shred the potatoes and cabbage. Place shredded potatoes in a clean kitchen towel and squeeze out as much moisture as possible.
2. Transfer the potatoes and cabbage to a large bowl. Add Irish cheddar, green onions, garlic powder, salt, pepper, and smoked paprika (if using). Mix thoroughly.
3. Heat butter (and olive oil if using) in a large cast iron skillet over medium-high heat.
4. Spread the mixture evenly into the skillet and press it down gently with a spatula.
5. Cook undisturbed for 6–8 minutes until the bottom is golden and crisp.
6. Reduce heat to medium-low, cover the skillet, and cook for another 10–12 minutes to allow the inside to steam and cook through.
7. Uncover and sprinkle extra cheddar on top if desired. Cook uncovered for another 3–5 minutes or place under the broiler to brown the cheese.
8. Slice and serve hot, garnished with extra green onions.
Notes
Store cooled leftovers in an airtight container in the fridge for up to 3 days.
Reheat slices in a skillet or oven for best crispness.
