Ingredients
4 bone-in, skin-on chicken thighs
2 bell peppers, chopped
1 zucchini, chopped
2 medium potatoes, diced
3 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon fresh thyme
1 teaspoon dried Italian seasoning
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Preheat the oven to 425°F (220°C).
2. Chop the vegetables into similar-sized pieces and place them on a large sheet pan.
3. Drizzle with half the olive oil, season with half the Italian seasoning, garlic, salt, and pepper. Toss well.
