- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup hot water
- 1/2 cup unsalted butter (softened, for frosting)
- 2 cups powdered sugar (for frosting)
- 1/3 cup cocoa powder (for frosting)
- 2–3 tablespoons heavy cream or milk (for frosting)
- Mini marshmallows (for topping)
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix eggs, milk, oil, and vanilla extract. Pour into dry ingredients and stir until just combined.
- Slowly mix in hot water until batter is smooth. It will be thin.
- Divide batter evenly among cupcake liners, filling about 2/3 full.
- Bake for 18–22 minutes, until a toothpick comes out clean. Cool completely on a wire rack.
- For frosting: Beat butter until fluffy. Gradually add powdered sugar and cocoa powder. Add cream and vanilla, beating until smooth and fluffy.
