1 lb smoked sausage, sliced into 1/2-inch rounds

2 medium sweet potatoes, peeled and diced

3 tbsp honey

3 cloves garlic, minced

2 tbsp soy sauce

2 tbsp olive oil

1/2 tsp salt

1/4 tsp black pepper

2 tbsp chopped fresh parsley (optional)


Instructions

1. Peel and dice the sweet potatoes into bite-sized chunks. Slice sausage into 1/2-inch rounds. Mince the garlic and preheat oven to 400°F (if using oven method).

2. Heat olive oil in a large skillet over medium-high heat. Sear sausage slices for 3-4 minutes per side until browned. Remove and set aside.
