Ingredients

1.5 pounds boneless skinless chicken breasts or thighs

1/3 cup honey

1/4 cup soy sauce

2 tablespoons olive oil

1 tablespoon rice vinegar

4 cloves garlic, minced

1 teaspoon ground black pepper

1/2 teaspoon smoked paprika

1 tablespoon fresh chopped parsley

Lemon wedges for serving

Skewers for grilling


Instructions

1. In a mixing bowl, whisk together honey, soy sauce, olive oil, rice vinegar, minced garlic, black pepper, and smoked paprika until well blended.

2. Add chicken chunks and toss to coat evenly. Cover and refrigerate for at least 30 minutes or up to 4 hours. Soak wooden skewers in water if using.

3. Thread marinated chicken onto skewers, spacing pieces slightly. Discard leftover marinade.

4. Preheat grill or grill pan over medium-high heat and lightly oil the grates.

5. Grill skewers for 10–12 minutes, turning every 2–3 minutes, until charred and chicken reaches 165°F internally.

6. Remove from heat, garnish with parsley, and serve with lemon wedges or dipping sauce of choice.


Notes

Soak wooden skewers for at least 30 minutes to prevent burning during grilling.

For extra flavor, reserve some marinade (before adding chicken) for brushing during grilling or serving.

Don’t over-marinate—2 to 4 hours is perfect to avoid mushy texture.
