Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp chili powder
  • Juice of 1 lime
  • 1 cup shredded queso blanco or Monterey Jack cheese
  • 3/4 cup heavy cream (or milk)
  • 1 tbsp butter

Instructions

  1. Marinate the Chicken: Pat chicken dry. Mix garlic powder, paprika, cumin, salt, pepper, and chili powder. Rub onto chicken with olive oil and lime juice. Marinate for at least 30 minutes.
  2. Cook the Chicken: Heat grill or skillet over medium-high. Cook chicken 6–7 minutes per side, until golden and cooked through (165°F internal temp). Rest for 5 minutes.
  3. Make the Cheese Sauce: In a saucepan, melt butter over medium heat. Add heavy cream and stir. Slowly add cheese and stir until melted and smooth.
