Ingredients

1 cup all-purpose flour

1/2 cup freshly grated parmesan cheese

1 tablespoon finely chopped fresh rosemary

4 tablespoons cold unsalted butter, cubed

1/2 teaspoon salt

34 tablespoons cold water


Instructions

1. In a mixing bowl, combine flour, parmesan, rosemary, and salt.

2. Add cold butter and work it in with fingers or a pastry cutter until mixture resembles coarse crumbs.

3. Gradually add cold water, mixing until dough comes together without becoming sticky.

4. Form the dough into a disk, wrap in plastic wrap, and chill for 30 minutes.

5. Preheat oven to 375°F (190°C).

6. Roll dough on a lightly floured surface to 1/8-inch thickness.

7. Cut into desired shapes using cookie cutters or a knife.

8. Place crackers on a parchment-lined baking sheet and optionally prick with a fork.

9. Bake for 12–15 minutes or until golden and crisp.

10. Let cool completely on a wire rack before storing.


Notes
