Description

A cozy and flavorful breakfast favorite, these Homemade Maple Chicken Breakfast Sausages are a quick breakfast idea that’s easy to make and packed with protein. Perfect for meal prep, weekend brunch, or breakfast sandwiches. Sweetened lightly with maple syrup and seasoned with classic herbs, they’re a healthier alternative to store-bought sausages. Whether you’re looking for easy dinner options, high-protein snacks, or breakfast ideas, this easy recipe will become a staple.

Ingredients

1 pound ground chicken

2 tablespoons pure maple syrup

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried sage

1/2 teaspoon dried thyme

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon crushed red pepper flakes (optional)

1 tablespoon olive oil or neutral oil (for cooking)

Instructions

1. In a large bowl, combine ground chicken, maple syrup, salt, pepper, sage, thyme, garlic powder, onion powder, and red pepper flakes if using. Mix until just combined.

2. Shape mixture into 12–14 small patties, about 1/2 inch thick each.

3. Preheat a non-stick or cast iron skillet over medium heat. Add oil and heat until shimmering.

4. Place patties in the pan without overcrowding. Cook for 3–4 minutes per side, until golden brown and internal temperature reaches 165°F.

5. Transfer to a paper towel-lined plate. Serve hot or let cool to store for later.

Notes

Use a mix of white and dark meat chicken for juicier patties.

Freeze cooked or raw patties in a single layer, then store in a zip-top bag for up to 3 months.

For even browning, let patties cook undisturbed before flipping.
