Ingredients
2 tablespoons olive oil
1 medium yellow onion, chopped
3 cloves garlic, minced
1 pound ground beef
2 tablespoons tomato paste
1 can (28 ounces) crushed tomatoes
4 cups beef broth
2 teaspoons Italian seasoning
1/4 teaspoon red pepper flakes (optional)
8 ounces farfalle pasta
1 cup ricotta cheese
1/2 cup grated parmesan cheese
2 tablespoons chopped fresh parsley
Salt and pepper, to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for about 5 minutes until translucent. Add garlic and cook until fragrant, about 1 minute.
2. Add ground beef and cook until browned and no longer pink. Drain excess fat if needed.
3. Stir in tomato paste and cook for 2 minutes to enhance flavor.
4. Add crushed tomatoes, beef broth, Italian seasoning, and red pepper flakes. Stir well and bring to a boil.
5. Reduce heat and let the soup simmer for 20–25 minutes to let flavors develop.
6. While the soup simmers, cook farfalle pasta separately until al dente. Drain and set aside.
7. During the last 5 minutes of simmering, stir in cooked pasta and adjust seasoning with salt and pepper.
8. Serve hot, topped with a scoop of ricotta, a sprinkle of parmesan, and chopped parsley.
Notes
For best texture, cook pasta separately and add it just before serving.
Don’t stir in the ricotta—let it melt on top for creamy bites.
Use high-quality broth for deeper flavor and richer soup.
