Ingredients
3 cups old-fashioned rolled oats
1/3 cup unsweetened cocoa powder
1/2 teaspoon salt
1/2 cup chopped peanuts (or almonds)
1/2 cup honey or maple syrup
1/3 cup coconut oil
1 teaspoon vanilla extract
1/2 cup chopped dark chocolate
Optional: 1/4 cup shredded coconut, dried fruit, or puffed rice
Instructions
1. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine oats, cocoa powder, salt, and chopped nuts.
3. In a saucepan, melt the coconut oil and honey (or maple syrup) over low heat. Remove from heat and stir in vanilla.
4. Pour the wet mixture over the dry ingredients. Mix until evenly coated.
5. Spread the mixture onto the prepared baking sheet and press down gently.
6. Bake for 20–25 minutes, stirring once halfway through.
7. Let cool for 10 minutes, then sprinkle chopped chocolate over top.
8. Allow to cool completely before breaking into chunks and storing.
Notes
Make sure to let the granola cool fully before storing to keep it crunchy.
Don’t add chocolate before baking—let the heat of the granola melt it post-bake.
Store in an airtight jar to keep it fresh and crisp for up to 2 weeks.
