Ingredients

  • 1 tablespoon olive oil or 2 tablespoons butter
  • 1 onion, finely chopped
  • 2 carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 pound ground beef (80/20)
  • 1 pound ground pork
  • 1/2 cup red wine (or beef broth with a splash of balsamic vinegar)
  • 1 (28-ounce) can crushed tomatoes
  • 1/2 cup whole milk or heavy cream
  • Salt and freshly ground black pepper, to taste
  • Pinch of nutmeg (optional)
  • Fresh parsley or basil, for garnish (optional)

Instructions

  1. In a large heavy-bottomed pot, heat olive oil or butter over medium heat.
  2. Add onion, carrots, and celery. Sauté until softened, about 8–10 minutes.
  3. Stir in garlic and cook for 1 more minute. Add tomato paste and cook for another 2 minutes.
  4. Add ground beef and pork. Cook until browned, breaking up with a spoon.
  5. Pour in red wine. Scrape the bottom of the pot to deglaze, and simmer until mostly reduced.
  6. Add crushed tomatoes. Season with salt, pepper, and nutmeg if using. Bring to a simmer.
  7. Reduce heat to low and simmer uncovered for 1.5 to 2 hours, stirring occasionally.
  8. Stir in milk or cream in the last 15 minutes. Adjust seasoning to taste.
  9. Let rest for 10 minutes before serving. Garnish with herbs if desired.
