Ingredients
4 large egg whites
1 cup granulated sugar
1/4 teaspoon cream of tartar
1 teaspoon vanilla extract
Green gel food coloring (optional)
1 cup heavy whipping cream
2 tablespoons powdered sugar
1/2 cup fresh cranberries or red berries
Fresh rosemary or pine sprigs (for decoration)
Powdered sugar (for dusting)
Instructions
1. Preheat your oven to 200°F (95°C). Line a baking sheet with parchment paper and trace 3–4 wreath shapes using a round object. Flip the paper over so the pencil doesn’t touch the meringue.
2. In a clean, dry mixing bowl, beat the egg whites until foamy. Add the cream of tartar and continue beating.
3. Gradually add the granulated sugar, one tablespoon at a time, until stiff, glossy peaks form.
4. Mix in the vanilla extract and green gel food coloring (if using) just until blended.
5. Transfer the meringue to a piping bag fitted with a star tip. Pipe swirled wreath shapes following the outlines on the parchment paper.
6. Bake for 1.5 to 2 hours until dry and crisp. Turn off the oven and allow them to cool inside with the door slightly open for at least 1 hour.
7. Beat the heavy cream with powdered sugar until stiff peaks form. Keep chilled until ready to use.
8. Once meringues are completely cool, pipe or spoon whipped cream into the center.
9. Top with cranberries or red berries and add rosemary sprigs for decoration.
10. Dust lightly with powdered sugar and serve immediately.
Notes
Always use a completely clean, grease-free bowl to whip the egg whites properly.
For best visual results, use gel coloring to maintain meringue stability.
Decorate just before serving to keep the meringues crisp.
