Ingredients

1.5 pounds ground beef

6 medium Yukon Gold potatoes, sliced

1 small onion, diced

2 cloves garlic, minced (optional)

1.5 cups shredded cheddar cheese

10.5 ounces cream of mushroom soup

0.5 cup milk

1 teaspoon salt

0.5 teaspoon black pepper

0.5 teaspoon paprika

2 tablespoons fresh parsley, chopped (garnish)

Instructions

1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch casserole dish.

2. In a skillet, brown the ground beef over medium heat. Add onion and optional garlic. Cook until soft. Drain the excess fat.

3. In a bowl, whisk together cream of mushroom soup, milk, salt, pepper, and paprika.

4. Layer sliced potatoes at the bottom of the casserole dish. Add half the ground beef mixture. Spoon some of the soup mixture on top. Sprinkle cheese. Repeat layers.

5. Cover tightly with foil and bake for 45 minutes.

6. Uncover and bake an additional 15–20 minutes until the top is bubbly and golden.

7. Let the casserole rest 5–10 minutes before serving. Garnish with chopped parsley.

Notes

Use Yukon Gold potatoes for the best balance of creaminess and structure.

Drain the beef well to avoid a greasy base.

Let the casserole rest before slicing to help the layers set nicely.
