Ingredients
1/4 cup cottage cheese
2 tablespoons unsweetened cocoa powder
2 tablespoons oat flour
1 tablespoon maple syrup
1 tablespoon almond milk
1/4 teaspoon baking powder
1/2 teaspoon vanilla extract
1 pinch salt
1 tablespoon chocolate chips
1/2 scoop chocolate protein powder (optional)
Instructions
1. Add cottage cheese to a blender or food processor and blend until smooth.
2. In a bowl, mix cocoa powder, oat flour, baking powder, and salt.
3. Add blended cottage cheese, maple syrup, almond milk, and vanilla extract to the dry ingredients. Stir until smooth.
4. Fold in chocolate chips.
5. Grease a microwave-safe ramekin or mug and pour in the batter. Top with extra chips if desired.
6. Microwave on high for 40–60 seconds. Start with 40 and check doneness.
7. Let cool for 1–2 minutes and enjoy warm.
