Ingredients

2 large boneless skinless chicken breasts

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

½ teaspoon onion powder

2 teaspoons chopped fresh thyme (plus more for garnish)

2 tablespoons olive oil (divided)

1 tablespoon unsalted butter (divided)

2 medium leeks (thinly sliced and rinsed)

½ cup grated parmesan cheese

1 cup heavy cream

¾ cup crumbled feta cheese

1 teaspoon truffle oil

1 teaspoon lemon zest (optional)

1 tablespoon chopped parsley (for garnish)


Instructions

1. Pat the chicken breasts dry and cut into evenly sized chunks or strips. Season with salt, pepper, garlic powder, onion powder, and thyme.

2. Heat 1 tablespoon olive oil and ½ tablespoon butter in a large skillet. Add leeks and sauté for 8–10 minutes until soft.

3. Sprinkle parmesan cheese over the softened leeks and transfer to a baking sheet. Broil for 2–3 minutes until golden and crisp. Set aside.

4. In the same skillet, heat remaining olive oil over medium-high heat. Add chicken in a single layer and sear 3–4 minutes per side until golden and cooked through. Remove from skillet and set aside.

5. Reduce heat to medium-low. Add remaining butter and pour in heavy cream. Stir gently and add crumbled feta. Whisk until smooth and thickened, about 5–7 minutes.

6. Add truffle oil and a pinch of salt and thyme. Stir to combine. Return chicken to the pan and toss in sauce until coated.

7. Top with crispy parmesan leeks and garnish with parsley and lemon zest if using. Serve hot.
