Ingredients

6 bone-in, skin-on chicken thighs

2 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)

1 teaspoon dried oregano

Zest of 1 lemon

Juice of 1 lemon

1 lemon, thinly sliced

1/2 cup low-sodium chicken broth

Salt and freshly ground black pepper, to taste

Optional garnish: extra fresh thyme or parsley


Instructions

1. Preheat your oven to 400°F (200°C). Pat chicken thighs dry with paper towels and season both sides with salt and pepper.

2. Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken skin-side down and sear for 5–6 minutes until golden and crisp. Flip and cook for another 2 minutes. Remove and set aside.

3. Reduce skillet heat to medium. Add garlic and sauté for 30 seconds until fragrant. Stir in thyme, rosemary, oregano, lemon zest, and lemon juice. Let simmer for 1 minute.

4. Deglaze the skillet with chicken broth, scraping up browned bits. Nestle chicken back into the pan, skin-side up, and place lemon slices between thighs.

5. Transfer skillet to the oven. Roast for 25–30 minutes or until chicken reaches 165°F internal temperature.

6. (Optional) Broil for the last 2–3 minutes for extra crispy skin.

7. Let chicken rest for 5 minutes before serving. Spoon pan sauce over and garnish with herbs if desired.


Notes

Pat the chicken dry thoroughly to help the skin crisp up perfectly during searing.
