Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
2 tablespoons granulated sugar
24 ounces cream cheese, softened
1 cup granulated sugar
1/2 cup sour cream
2 teaspoons vanilla extract
3 large eggs
2 cups fresh strawberries, chopped
1/2 cup strawberry jam
1 tablespoon granulated sugar
1 tablespoon cornstarch
3/4 cup all-purpose flour
1/3 cup brown sugar
1/3 cup cold unsalted butter, cubed
Instructions
1. Preheat oven to 325°F (163°C). Line a 9×13-inch baking dish with parchment paper.
2. Mix graham cracker crumbs, melted butter, and sugar in a bowl. Press into the pan and bake for 10 minutes. Let cool.
3. Beat cream cheese until smooth. Add sugar and beat again. Mix in sour cream and vanilla, then add eggs one at a time. Pour over crust.
4. In a saucepan, cook strawberries, jam, sugar, and cornstarch over medium heat until thickened. Let cool slightly. Spoon gently over cheesecake layer.
5. For the crumble, combine flour, brown sugar, and cubed butter. Use fingers or a pastry cutter to create crumbs. Sprinkle over the strawberry layer.
6. Bake for 40–45 minutes until edges are set and center slightly jiggles. Cool completely, then chill for at least 4 hours (overnight is best).
7. Slice into bars and serve chilled.
Notes
Always bring cream cheese to room temperature for the smoothest filling.
Do not skip chilling time—it’s essential for clean cuts and proper texture.
Feel free to switch out strawberries with raspberries or blueberries for a new flavor profile.
