3 cups shredded rotisserie chicken

1 red apple, diced

2 celery stalks, sliced

1/4 cup red onion, finely chopped

1/3 cup toasted walnuts, chopped

1/2 cup mayonnaise

1 teaspoon Dijon mustard

1 tablespoon lemon juice

1 tablespoon fresh parsley, chopped

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Remove skin and bones from the rotisserie chicken and shred the meat into bite-sized pieces.

2. Dice the red apple, slice the celery, and finely chop the red onion.
