Ingredients
2 cups fresh raspberries
2 cups heavy whipping cream
1/2 cup powdered sugar
1 tablespoon unflavored gelatin
1 teaspoon vanilla extract
1 tablespoon lemon juice
3 tablespoons water
Instructions
1. Blend raspberries until smooth, then strain to remove seeds.
2. In a small bowl, bloom gelatin with water for 5 minutes.
3. Heat raspberry puree with lemon juice and powdered sugar until sugar dissolves, then stir in bloomed gelatin until fully dissolved.
4. Let raspberry mixture cool to room temperature.
5. Whip heavy cream with vanilla extract to soft peaks.
6. Gently fold cooled raspberry mixture into whipped cream in batches.
7. Pour mixture into heart-shaped silicone molds and tap to remove air bubbles.
8. Refrigerate for 4–6 hours or overnight until fully set.
