Description
A colorful, flavorful, and nutritious one-pan meal that features seared sausage with sautéed vegetables. Quick to make, easy to clean up, and perfect for meal prep or a weeknight dinner.
Ingredients
- 12 oz sausage (chicken, turkey, or pork), sliced
- 1 medium zucchini, sliced
- 2 bell peppers (any color), sliced
- 1/2 red onion, chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and black pepper, to taste
- Fresh herbs (parsley, basil, or oregano), for garnish
- Optional: red pepper flakes, lemon juice
Instructions
- Slice sausage, zucchini, bell peppers, and onion. Mince the garlic.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
- Add sausage in a single layer. Cook for 2–3 minutes per side until browned. Remove and set aside.
- Add another tablespoon of olive oil to the skillet if needed.
- Sauté onions for 2 minutes, then add bell peppers and zucchini.
- Season with salt, pepper, and minced garlic. Cook for 6–8 minutes, stirring occasionally.
- Return sausage to the skillet. Stir everything together and cook for an additional 2–3 minutes.
- Garnish with fresh herbs and a squeeze of lemon juice, if using. Serve warm.
