Ingredients
2 cups fresh or frozen pitted cherries
2 cups plain full-fat Greek yogurt
1/4 cup honey or maple syrup
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 pinch salt
1/4 cup chopped cherries or dark chocolate chips (optional)
Instructions
1. Wash, pit, and halve the cherries (or thaw if using frozen). Drain any excess liquid.
2. Add cherries, Greek yogurt, honey/maple syrup, lemon juice, vanilla extract, and salt to a blender.
3. Blend until smooth, or pulse to leave chunks if desired.
4. Taste the mixture and adjust sweetness or acidity to your liking.
5. Chill the mixture in the refrigerator for 30–60 minutes.
6. Pour into an ice cream maker and churn for 20–25 minutes, or use a freezer-safe container and stir every 30 minutes for 2–3 hours.

8. Transfer to a container and freeze for 2–4 hours until firm.
