Ingredients
For the Marinade:
- 1/2 cup pineapple juice
- 1/3 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar or apple cider vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon olive oil
For the Chicken:
- 4 boneless, skinless chicken breasts
For Grilling and Garnish:
- 4–6 pineapple rings (fresh preferred)
- 1/2 cup BBQ sauce
- 2 tablespoons chopped fresh cilantro or parsley (optional)
- 2 tablespoons chopped green onions
Instructions
- In a mixing bowl, whisk together the pineapple juice, soy sauce, brown sugar, vinegar, garlic, ginger, and olive oil.
- Place chicken breasts in a resealable bag or shallow dish, pour marinade over, and refrigerate for 2–4 hours.
- Preheat grill or grill pan to medium-high heat. Lightly oil the grates.
- Remove chicken from marinade and grill for 5–7 minutes per side until internal temperature reaches 165°F (74°C).
- During the final minutes of grilling, brush chicken with BBQ sauce and flip to caramelize.
- Grill pineapple rings for 2–3 minutes per side until charred.
- Plate chicken with grilled pineapple, garnish with green onions and herbs if using.
