Ingredients

For the Marinade:

  • 1/2 cup pineapple juice
  • 1/3 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon olive oil

For the Chicken:

  • 4 boneless, skinless chicken breasts

For Grilling and Garnish:

  • 46 pineapple rings (fresh preferred)
  • 1/2 cup BBQ sauce
  • 2 tablespoons chopped fresh cilantro or parsley (optional)
  • 2 tablespoons chopped green onions

Instructions

  1. In a mixing bowl, whisk together the pineapple juice, soy sauce, brown sugar, vinegar, garlic, ginger, and olive oil.
  2. Place chicken breasts in a resealable bag or shallow dish, pour marinade over, and refrigerate for 2–4 hours.
  3. Preheat grill or grill pan to medium-high heat. Lightly oil the grates.
  4. Remove chicken from marinade and grill for 5–7 minutes per side until internal temperature reaches 165°F (74°C).
  5. During the final minutes of grilling, brush chicken with BBQ sauce and flip to caramelize.
  6. Grill pineapple rings for 2–3 minutes per side until charred.
  7. Plate chicken with grilled pineapple, garnish with green onions and herbs if using.
