Ingredients

  • 3 ripe bananas (plus 1 extra for topping, sliced)
  • 1/2 cup crushed pineapple (lightly drained)
  • 1/2 cup shredded sweetened coconut
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (optional)
  • 2/3 cup brown sugar
  • 2 large eggs
  • 1/2 cup unsalted butter (melted) or neutral oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the brown sugar, eggs, melted butter (or oil), vanilla extract, and crushed pineapple. Stir until combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
