- 3 ripe bananas (plus 1 extra for topping, sliced)
- 1/2 cup crushed pineapple (lightly drained)
- 1/2 cup shredded sweetened coconut
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon (optional)
- 2/3 cup brown sugar
- 2 large eggs
- 1/2 cup unsalted butter (melted) or neutral oil
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
- In a large bowl, mash the ripe bananas until smooth.
- Add the brown sugar, eggs, melted butter (or oil), vanilla extract, and crushed pineapple. Stir until combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gradually fold the dry ingredients into the wet mixture until just combined.
