Ingredients

1 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

2 large eggs

3/4 cup brown sugar

1/2 cup vegetable oil

1 teaspoon vanilla extract

1 cup grated carrots

1 cup grated apple

1/2 cup chopped walnuts

1/2 cup raisins


Instructions

1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.

2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.

3. In a separate bowl, whisk eggs, brown sugar, oil, and vanilla extract until smooth.

4. Fold in grated carrots, grated apple, raisins, and chopped walnuts.

5. Gradually add dry ingredients into wet mixture. Stir until just combined; don’t overmix.

6. Pour batter into prepared pan and smooth the top.

7. Bake for 55–65 minutes, tenting with foil if the top browns too quickly.
