Ingredients
- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper (red, yellow, or green), diced
- 2 cups fresh spinach or kale
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- 1/4 tsp red chili flakes (optional)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced sweet potatoes and cook for 8-10 minutes, stirring occasionally, until they begin to soften. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add the ground turkey and cook for 5-7 minutes, breaking it apart with a spatula, until fully browned. Season with salt, pepper, paprika, and cumin.
- Add the chopped onion, garlic, and bell pepper to the skillet. Cook for another 3-4 minutes until the vegetables are tender and fragrant.
- Return the sweet potatoes to the skillet and mix well. Stir in the spinach or kale and cook for another 2-3 minutes, until wilted. Add red chili flakes if using.
- Taste and adjust seasonings if needed. Serve warm and enjoy!
