Ingredients

1 lb (450 g) ground beef

2 medium (about lb / 680 g) sweet potatoes, peeled and diced

1 large green bell pepper, diced

1 cup cottage cheese

2 tbsp olive oil

1½ tsp smoked paprika

1 tsp chili powder

1 tsp fine salt

½ tsp black pepper

¼ cup chopped fresh herbs (cilantro or parsley)


Instructions

1. Preheat the oven to 400°F (200°C). Line a sheet pan.

2. Toss diced sweet potatoes with 1 tbsp olive oil, ¾ tsp smoked paprika, ½ tsp chili powder, ½ tsp salt, and a pinch of pepper. Roast 20–25 minutes, flipping once, until tender and caramelized.

3. Heat a skillet over medium. Add ground beef, breaking it up. Season with remaining smoked paprika, chili powder, ½ tsp salt, and black pepper. Cook 6–8 minutes until browned; drain excess fat if needed.

4. Add 1 tbsp olive oil to the skillet (if dry). Sauté diced green pepper 3–4 minutes until crisp‑tender.

5. Assemble bowls: sweet potatoes + beef + peppers. Top with cottage cheese and herbs. Serve hot.


Notes

Cut sweet potatoes into even ½‑inch cubes so they roast evenly and caramelize.

Don’t overcrowd the pan when browning beef—space helps it sear instead of steam.

Add herbs right before serving to keep their flavor bright and fresh.
